Perfect for a nutritious lunch or even a quick week night dinner. ![]() Serves 1 Recipe by Kerry Locatelli Ingredients: 3 Eggs 40g Edam cheese 100g Broccoli Other vegetables can be used in place of the broccoli- another favourite of mine is spinach. I generally use about 150g of frozen free-flow spinach. Method: Put the oven on to 200 C. Rinse the broccoli and cut into small pieces (smaller pieces cook faster). Add coconut oil to a small oven proof frying pan and add broccoli. Fry gently while you mix the eggs. Add the eggs to the pan and sprinkle cheese on top. Put the pan in the oven on the lowest rack and leave for 5 mins. Move the pan to the top rack to grill the top. Enjoy! |
