-150g Chicken (diced into small pieces)
-80g Baby Green Beans (frozen- straight from the freezer)
-2 TBLSP Spring Onion (chopped)
-20g Thai Red Curry Paste (make sure there is no sugar in the paste)
-50ml Coconut Cream
-15g Macadamia Nuts (crushed) -Coconut oil for cooking
1. Heat the coconut oil in a pan and add the chicken. Add the Spring onion and fry.
2.Add the curry paste and mix ‘til well combined. Let this simmer for a minute.
3. Stir in the coconut cream and add the green beans.
4. Bring to a boil and turn the heat down to let the curry simmer for 5 minutes.
5. Serve with the macadamia nuts sprinkled on top.
