Cover, bring to the boil and allow to boil for 7 minutes.
Mix the Balsamic vinegar and olive oil.
Finely dice the onions and add to the vinegar and oil.
Finely dice 1/2 the cucumber, capsicums and celery, and add to the vinegar and oil.
Shred the lettuce and put on the plate. Slice the tomato and arrange on the lettuce. Slice the remaining cucumber into thin slices and arrange on the plate.
Mix the vinegar, oil and diced vegetables really well and put onto the plate. Slice the boiled egg and place on top.
