By stopping and simply eating we are able to enjoy our meals more, eat until we are full (not more!) and truly appreciate the flavours of great food that is great for us. We also encourage optimal digestion by being more in a state of parasympathetic nervous system dominance. This is the ‘rest and digest’ state, as compared to the ‘fight or flight’ state of sympathetic nervous system dominance. When we are in the fight-or-flight state we restrict optimal digestion by shunting blood and nutrients away from the digestive organs and reducing gastric secretions and stomach acid necessary for digestion.
