These pancakes are the perfect way to start the weekend (or any day for that matter). The spinach gives them a rich green colour whilst ensuring you are getting your veges in! They contain less than 10g of Carbohydrates per serve and can be made in less than 10 minutes- the perfect quick and easy guilt free treat!
Serves 2 hungry people!
- 6 eggs
- 1/4C coconut flour
- 1/2t baking powder
- 4 scoops clean lean protein (I use chocolate or vanilla)
- 1/3 C coconut milk
-1/2 banana (optional)
- Handful of spinach
- 1/4 C Pure Coco Cacao Nibs
- Coconut oil (for frying)
Put everything except the Cacao nibs into a blender and blend until smooth. Stir through the Cacao nibs.
Melt coconut oil in a large non stick frying pan. Cook pancakes until bubbles start to form and then flip (approx. 3 mins each side).
Serve with coconut yoghurt, berries and coconut chips.
