This recipe from Kerry Locatelli would be the perfect lunch to throw together if your rushed for time as many of us are nowadays! This recipe joins the '10 under 10' category meaning it is less then 10g of carbohydrates and can be made in less then 10 minutes!
Put the eggs in a pot and fill with warm water.
Cover, bring to the boil and allow to boil for 7 minutes.
Mix the Balsamic vinegar and olive oil.
Finely dice the onions and add to the vinegar and oil.
Finely dice 1/2 the cucumber, capsicums and celery, and add to the vinegar and oil.
Shred the lettuce and put on the plate. Slice the tomato and arrange on the lettuce. Slice the remaining cucumber into thin slices and arrange on the plate.
Mix the vinegar, oil and diced vegetables really well and put onto the plate. Slice the boiled egg and place on top.
